Anyone? This is a simple recipe to jazz up your Friday fishy dishy!
GARLIC & PARMESAN CRUSTED COD
4 small cod fillets or 2 large fillets – skinless and boneless, close to room temp
1 tablespoon mayonnaise
Salt and cracked black pepper to season
Garlic powder, to season
1/2 cup panko breadcrumbs
2 tablespoons fresh parsley, finely chopped
1/2 cup parmesan cheese, freshly grated
3 cloves garlic, minced
2 tablespoons melted butter
2 tablespoons olive oil
Salt and cracked black pepper, to season
Cooking oil spray
1/2 a lemon – zested
Squeeze of lemon juice
Preheat oven at 180’
In a bowl add breadcrumbs, parsley, parmesan, garlic, zest, melted butter, olive oil, salt and cracked black pepper and combine.
Next season your fish all over with salt, pepper and a pinch of garlic powder. Spread 1 teaspoon of mayonnaise over the top of each fillet.
Place your fish onto a baking dish, then press the mayo-side of the fish firmly into the crumb mixture ensuring it sticks evenly. Repeat with remaining fish.
Lightly spray each fillet with cooking oil spray.
Then place your fish into the oven for 15 mins, then finish off under the grill for a few 2-3 mins to crisp up the crumb. Finish with a squeeze of lemon and serve!
