CHORIZO, VEG, SWEET POTATO AND FRIED EGG. This is perfect for breakfast, brunch, lunch, brinner and dinner! Plus it’s super simple and requires very little cooking! And who doesn’t love a fried egg to top off a meal!

INGREDIENTS:

1 red pepper, roughly chopped
1 yellow pepper, roughly chopped
1 onion, roughly chopped
225g of chorizo sliced thickly
Eggs
Green chilli
Black pepper and oil
Parsley and feta (optional)

METHOD:

Put everything except the eggs on a oven ready dish. And cook on 200 until veggies are charred.

Fry your eggs.

Place veg and chorizo on the plate and top with the egg. Scatter parsley and feta on top. And you’re ready to eat!
