🥥 COCONUT CINNAMON RAISIN GRANOLA 🌱
I’m on a granola kick – making my own and trying to create a healthy and tasty version. I’ve used flaxseed for added omega 3. And using coconut oil keeps it vegan friendly.
3 cups rolled oats
1/2 tsp salt
2 tsp cinnamon
1/4 cup flaxseed
1/2 cup of sliced almonds
1/4 cup of shaved or desiccated coconut
1/2 cup raisins
1/2 cup almond butter
1/3 cup maple syrup
1/3 cup coconut oil
Preheat oven to 170* and line baking sheet with parchment paper.
In a large bowl, mix together your dry ingredients except for the raisins
In a saucepan add wet ingredients warm until the coconut oil has melted. Then to dry ingredients and stir until fully mixed.
Spread onto parchment paper and press tightly into one flat layer. The oats should all be touching (no empty spots) but not too thick.
Bake for 17-20 minutes or until golden brown on edges. Stirring halfway through.
After an hour, add raisins. And store in airtight container at room temperature.
