Double carbs anyone?? It’s is Friday night after all!! This little guilty pleasure was a rush job. It was ready within 30mins but I did hustle in the kitchen as my daughter aged 2 was – ‘hungy’. However afterward she was one satisfied customer! So here it is
CHEESY SAUSAGE PASTA – TOPPED WITH GARLIC BREAD
200g of pasta like penne or spirali
6 good quality pork sausage, skin removed and cut into small meatballs.
1 tin of chopped tomatoes
2 roasted red peppers from a antipasti jar
1 onion, diced
Half a pack of baby mushrooms, chopped
2 handfuls of baby spinach, chopped
2 garlic cloves
1 tsp of Italian seasoning
1 vegetable stock cube
4 Garlic bread slices
1 ball of mozzarella, torn
And plenty of grated cheddar
Salt and pepper to taste
Preheat your oven to 200’
Boil pasta as per instructions drain and set aside
In an oven friendly deep dish (ie wide cast iron) heat some oil on a medium heat. Add your onion, mushrooms and garlic and sauté for 5 mins.
Then add the sausage ‘meatballs’ and allow to brown. Follow with the chopped tomatoes, spinach, peppers, Italian herbs and stock cube. Using the tin form the chopped tomatoes add half a tin of water. Allow it to come to a boil. Throw in your pasta and mix.
Once combined well. Tear up your garlic bread slices. Place on top of your pasta. Add the cheese over it and bake in the oven until the bread is brown and crisp and the cheese is all melted. Serve immediately. Try and not eat it all… you can thank me later.
