HASSELBACK HALLOUMI IN A GREEK STEW… Need I say more… thank me later…
1 tin chopped tomatoes
1 chopped red onion
1 red pepper finely diced
3 gloves of garlic minced garlic
1 tsp dried oregano
1/2 tsp of smoked paprika
1/3 tsp it black pepper
1/2 dried chilli flakes
3-4 blocks of halloumi
Handful of flat-leaf parsley, finely chopped
Heat the oven to 180’C.
Put the garlic, onion, pepper in an oven ready dish and sauté with some olive oil until soft. Then add your chopped tomatoes, pepper, oregano, paprika and chilli flakes. Cook in the oven for 15 minutes.
Next slice your halloumi and cut halfway down your halloumi. Do this to all of them. Take the baking dish out of the oven and stir in the olives. Place your halloumi blocks into the sauce, drizzle a little olive oil over the halloumi and bake for another 45 minutes. The halloumi should be golden and soft.
Scatter over the lemon zest and parsley and serve with flatbreads and hummus (hummus recipe on my grid)
