INDULGENT! Dinner at my brothers last night and I made a last min tiramisu. This is not traditional! No eggs and I used amaretto however it is very tasty and ready in a snap! And there was nothing left over!
4 tsp instant coffee granules
4 tbsp Amaretto
250g tub mascarpone
100g condensed milk
1 tsp vanilla extract
Packet of sponge fingers
Grated dark chocolate
In a shallow dish mix the coffee granules with 2 tbsp boiling water. Add the amaretto and 75ml cold water and set aside.
Make the cream layer by beating the mascarpone, condensed milk and vanilla extract with an electric whisk until thick and smooth.
Soak the sponge fingers in the coffee mixture for a few secs. Layer a small dish with the fingers and top with the cream. And repeat with a second layer. Grate dark chocolate over the top and chill for at least an hour before serving.
