LOW MAINTENANCE – HIGH FLAVOUR

So I’m back at work and with the school run and cooking – I’m back to simplicity. So this dinner is low ingredients. Little to no prep and throw it in the oven and let it do the work for you.

INGREDIENTS:

Duck legs
New potatoes
Salt and Pepper
Dried Rosemary

METHOD:

Take you duck legs out and let them get to room temp. Pre-heat your oven to 200’

Salt and pepper your duck and place in an oven ready pan skin side down. Brown the skin. You’ll see the fat staring to render from the duck.

When the skin is brown and crisp turn the legs over add chopped new potatoes with a little more salt and pepper and dried rosemary toss in the duck fat. Place into the oven and cook for 45mins to and hour. The potatoes should be brown and the duck will be cooked through. Serve with vegetables of your choice.
