SLOW COOKER CHICKEN ADOBO. This is a famous Filipino dish. I’ve super simplified it and cooked it all in the slow cooker for minimum effort, maximum taste!
1 head of garlic
1/2 a tsp of chilli flakes or more if you wish.
4 -6 skin-on chicken thighs and legs.
1 tbsp of oil
¾ cup white wine vinegar
¾ cup soy sauce
5 dried bay leaves
1 tbsp of dark brown sugar
Freshly ground black pepper
Heat oil in a pan and brown your chicken skin side down.
Meanwhile cut your head of garlic in half place it in the slow cooker. Add in the other ingredients; chilli flakes, white wine vinegar, soy sauce, bay leaves, sugar and pepper.
Add your browned chicken into the slow cooker and cook on high for 4-6 hrs until the sauce reduces.
When ready, serve with rice, spring onions and stir fried veg!
