SLOW COOKER GINGER GLAZE PORK
Hope you all had a lovely weekend! If like me have little time to get dinner on the table when you get home. Then this slow cooker pork is the one! It cooks whilst your at work. All you have to do is the final touches to serve! You can prep the pork with a dry rub the night before and refrigerate. In the morning place it in the slow cooker and go on your merry way!
The ginger gives a warming flavour which is perfect for this cold weather we’re having. And the brown sugar makes it sweet and sticky.
1 Pork Fillet or tenderloin
THE RUB –
1 tbsp brown sugar
1 tsp ginger powder
1/2 tsp cinnamon
1 tsp garlic salt
1/2 tsp powdered cloves
1/4 tsp black pepper
1/2 tsp chilli flakes (optional)
1/4 cup brown sugar
1/2 tbsp cornflour mixed with a little water
2 tbsp cup rice vinegar
1/4 cup cold water
2 tbsp of dark soy sauce
1 inch of fresh ginger, grated
In a bowl mix your rub together and cover your pork all over. Place into the slow cooker and add a 1/4 cup of water making sure you do wash off the rub.
Cook on low for 6-8 hours.
In a sauce pan mix together your ingredients on a low heat until it forms a glaze.
Remove the pork from the slow cooker and place onto. Baking tray and pour the glaze over. Grill for a couple of mins until the pork starts to bubble and almost crisp. Slice the pork and sprinkle sesame seeds over and serve.
I served it with simple soy veg and noodle stir fry.
