SLOWCOOKER GIGANTES PLAKI – this is a Greek baked bean dish which can be vegan (don’t add feta) or vegetarian.
Sweet tomatoes and warm cinnamon create a super yummy dish. And because it’s in the slow cooker there is little to no effort at all. The added bonus is that the dish combines protein, fibre and vegetables making it low calorie and good for you!
1 red onion, finely chopped
3-4 garlic cloves, minced
1 tbsp tomato purée
1/2 tsp of ground cinnamon1 tsp of dried oregano
2 tins of chopped tomatoes
2 tins of butter beans, drained
feta, crumbled, to serve(optional)
Handful of flat-leaf parsley, chopped to serve
Add all your ingredients except the beans into the slow cooker. Set to high and cook for around 3 hours. Then add the beans and cook for 2 hours.
When done sprinkle parsley and feta(if using) serve and enjoy. I roasted some new potatoes with oil, salt and pepper. But is also lovely on sourdough toast!
