SLOWCOOKER JAMBALAYA I’m a big fan of throwing it all in and hoping for the best! And this was super simple to do. Healthy food and flavoursome and there was so much made it’s fed us for a few days!!

INGREDIENTS:

4-6 boneless, skinless chicken thighs
1 smoked sausage or chorizo, cut into 2-inch slices
1 large onion, chopped
1 large green pepper, seeded and chopped
3 stalks celery, chopped
1 tin of chopped tomatoes
3 cloves garlic, minced
600ml of chicken stock
1 tbsp Cajun Spice
1 teaspoon dried thyme
1 teaspoon dried oregano
1 pack of king prawns (optional)
1 3/4 cups long-grain rice
Parsley, optional garnish

METHOD:

In the slow cooker combine chicken, sausage, onion, green pepper, celery, tomatoes, garlic, chicken broth, spice mix, thyme and oregano. Cook on low for 5 hours.

The add rice; raise heat to high and cook for 30 minutes more, then if using add your prawns. Once cooked, throw on some chopped parsley and serve.
