SOY AND GARLIC CHICKEN AND PRAWN, EGG FRIED NOODLES.
This was needed big time last night. I did an exercise sesh which destroyed me just a little bit. 🤪 So I needed to cooked a speedy dinner before my arms and legs stopped working. It was also filled with lean protein and lots of veg.
400g of medium noodles. (I used waitrose ready to cook lentil noodles for a healthier option)
2 chicken breast fillet, flattened and thinly sliced
Small pack of king prawns
3 garlic cloves, peeled and finely sliced
220g long-standing broccoli, cut in half lengthways
2 carrots peeled and cut into matchsticks
2-3 tbsp soy sauce
2 eggs, beaten
Sea salt and freshly ground black pepper
If using dried noodles, cook per packet instructions. Drain noodles and set aside.
Meanwhile, get your sliced chicken and cover with cling film and flatten it with a rolling pin, then cut it diagonally into thin strips.
Heat a wok over a high heat and add a dash of oil. Season the chicken with salt and pepper, and stir-fry for about 3 minutes until golden brown all over.
Add the garlic and stir-fry for 30 seconds, then add the broccoli and carrots continue to stir-fry for a few minutes until tender.
Add the soy sauce to season. When the veg is tender, remove the contents of the wok and set them to one side.
Wipe out the wok, add a dash of oil and heat through. Add the eggs to the hot wok, season and stir over the heat, allowing the bottom of the egg to cook.
Add the noodles and toss well, breaking up the egg as you do so.
Throw the chicken and veg mixture to the wok and heat through, stir-frying over a medium heat. Top with the cooked king prawns. One final mix in and… Serve immediately!!
