SPAGHETTI WITH LEMON, PEAS & PROSCIUTTO
Speedy pasta dinner which is light, zingy and so simple to make. I genuinely made it in 30 minutes.
Handful of spaghetti
Juice and zest of 1 lemon, plus 1/2 for garnish
1 tbsp of butter
Handful of chopped parsley
1/2 a cup of grated Parmesan
1 tsp chilli flakes
6-7 strips of prosciutto, torn
1 cup of frozen peas
Freshly ground black pepper
In a large pot of salted boiling water, cook spaghetti as per packet instructions. Adding frozen peas towards the end to cook.
Meanwhile in a small bowl add lemon zest and juice, parsley, pepper and chilli flakes and mix together.
In a large pan add lemon juice and herb mix, butter, Parmesan, and ½ cup pasta water, then stir gently to combine, adding additional pasta water until creamy.
Follow with the pasta and prosciutto, and peas and toss. Serve up with extra Parmesan and lemon slices.
