SPICY GOAN FISH CURRY – I try not to use packet sauces but this was on offer and I was needing a bit of a night off. So thanks to @waitroseandpartners 20% off fish Friday I treated us to some gorgeous monkfish and @thespicetailor ready to go spice mix made my curry ready to go! And a speedy Friday night dinner for myself and Mr. M was so tasty!
@thespicetailor Firey Goan Curry Mix (3 stages of spice mix)
1/2 tsp of mustard seeds
1/2 tsp of cumin seeds
1 red onions diced
300g of cherry tomatoes, chopped
Monkfish or Cod (firm white fish)
1 tin of coconut milk
2 tbsp of desiccated coconut
Fry the first packet of spices from the packet. And cumin and mustards seeds in oil.
Add onion and brown. Follow with the chopped tomatoes until soft. Then follow with the second packet of spice base. Allow to simmer for 2-3 mins.
Then follow with the final packet and additional chilli flakes and desiccated coconut. And simmer for another 2-3 mins, follow with the coconut milk and allow the sauce to cook and thicken. Finally place your fish in coat in the sauce and on a gentle heat cook the fish through. Try not to stir it, you want the fish to remain in firm pieces.
Serve with basmati rice and coriander and enjoy!!!
