VEGAN CINNAMON CHERRY ALMOND GRANOLA – Do you make your own granola? I tried it this week, after being well and truly bored of store bought thought I’d combine some of my favourite flavours to make a cinnamon and raisin swirl. And when I went to my cupboard there were no raisins. So I settled for cherry. Which was still great!!! So here’s the recipe.
1/2 cup maple syrup
1/3 cup coconut oil
1/3 cup almond butter
1/4 teaspoon fine grain sea salt
3 cups rolled oats
3/4 cup dried cherry
1 cup of sliced raw almonds
2 teaspoons ground cinnamon
Preheat your oven to 160’ cover 2 baking trays with grease proof paper.
In a saucepan heat the maple syrup, coconut oil, almond butter, and salt over low heat. Cook until coconut oil is melted and the mixture is warmed through.
Meanwhile, to a large mixing bowl, add the oats, cherry, almonds, and cinnamon. Stir to combine. Pour the almond butter mixture over the oat mixture. Stir until the dry ingredients are well-coated.
Spread in a thin layer on your baking sheets. Place in oven and cook, stirring every 10 minutes, until lightly golden and fragrant, 20 to 30 minutes.
Remove from oven and let cool on baking sheet. Transfer to an airtight container and store at room temperature. It keeps well for weeks!
